Executive Chef, Kenny Claxton
Growing up on a farm in Pennsylvania, Kenny developed a love for food and fresh quality ingredients at a young age. Often eating from the family garden and animals raised on the farm built a deep appreciation for such practices, and developed an interest in preparing food. In 2003 he attended the Berks Career & Technology Center Culinary Program, which further developed his passion for food. In 2012, after continued training and work experience, Kenny moved to the Virgin Islands and began working at The Terrace Restaurant, where he worked his way up to the Sous Chef position.
In 2016, he accepted the Executive Chef position at The Longboard in St. John, taking a light and fresh approach to his food. His curiosity to travel and explore different cultures allowed him to immerse himself in a variety of different cooking techniques from around the world. It is with this in mind that The Easterly came to be, inspired by travels to Tulum & other rustic Caribbean locals. These unique experiences combined with a demand for great products, fresh & local seafood, produce and ingredients, have been instrumental in building a food culture not only within The Longboard & The Easterly but also within the Virgin Islands culinary scene.
